Pumpkin---A Super Food!

October is here and so is the season of pumpkin pies, jack-o-lanterns, and roasted pumpkin seeds by the fire place.  Well, if you are a pumpkin lover, it will please you to know that pumpkins are actually very healthy and nutritionally dense foods.  In fact, in his book SuperFoods Rx:  Fourteen Foods That Will Change Your Life, Dr. Steven Pratt wrote, "....pumpkin is one of the most nutritionally valuable foods known to man...."     The reason for the pumpkin having a super food status? Carotenoids -- powerful antioxidants that can erase the risk of various cancers, heart disease, even cataracts and macular degeneration!
